Ohhh, I’m exhausted. I’ve been in this kitchen a thousand times. It’s never looked so foreign. The peels… so ragged. The garnishes… so imprecise. In the distance, a shallot rolls off the counter. Untrimmed… neglected. My wrists ache… my soul aches… but my grip (pauses to admire the Tahoe Bliss handle)… my grip is resilient! I just discovered the TownCutler knives and was attracted to them when I saw the straight spine design of the eXo 10" Slicer (but it was sold out for Christmas) so i ordered the 6" Utility to try their knives. The knife was very light, agile and SHARP. So I ordered a second one. Just right as gifts for their intended new owners. Then I found the Baja series had the same straight spine as the eXo series. Woo Hoo, bought 3 of the 10" Slicers for gifts and 1 for me. Again the knife is light for a 10", sharp and I love the "needle sharp point". It balances well with a finger and thumb forward grip. Next gifts I ordered: a 7.5" Chopper for a cook with larger hands and an eXo curved fillet knife for a fisherman in the family. All the designs I have purchased so far are well designed & balanced, light and easy to handle (even the Chopper). And did I mention they are wickedly sharp.

So far this thing is fantastic. The shape is perfect for removing silver skin and getting precise trimming with its tip and curved shape. It has a slight flex which is great as well. Very happy, now just waiting for the saya to get restocked.

These are the perfect pallet knives on the market. Perfect flexibility while still being rigid enough for any flipping, plate swishing, or serving you might need in your daily grind. I hecking love them.

I tried this and throw away all my knifes. They need a little care cause you have to hand wash them but it’s totally worthed!

Great shucker nice balance extremely sturdy and stays pointy even after a year of shucking as a oyster shucker (works for scallops and clams too)

I had been eyeing these knives for a few years and decided finally to pull the plug. 40+ year-old steak knives from a first marriage were not cutting it anymore! The knives are beautiful with the color combination being fairly close to my Desert Dawn knives. I like the styling of the AG47 steak knives better. They are very chunky in ones hand and not delicate in the least. Very substantial and they slice through a thick filet like butter.

I picked up this knife to upgrade from a shorter knife. I'm really enjoying this knife so far, the handle is very comfortable, it's light and durable, and the curved edges on the spine are great for chopping. It holds its edge pretty well in the month I've used it. Would highly recommend this company for any knife needs.
