Great daily driver

I picked up this knife to upgrade from a shorter knife. I'm really enjoying this knife so far, the handle is very comfortable, it's light and durable, and the curved edges on the spine are great for chopping. It holds its edge pretty well in the month I've used it. Would highly recommend this company for any knife needs.

Pretty good professional kitchen daily driver

Bought this knife about a a year and a half ago and it has been my primary daily knife in a professional kitchen since then. Out of the box, it was quite sharp. For me, it held an acceptable edge for about 2 weeks, and has proven to follow roughly that timeline in terms of how often it needs sharpening. Everyone has their own standards and habits around that, but I was hoping for a little bit more edge retention.

However, I found the geometry and fit/finish of the knife very good. It can tackle just about any task you throw at it short of slamming through bone. I made the transition to this knife because I wanted something in a stainless steel that could put up with corrosive ingredients better than the blue super gyuto I was using before. It has performed better in retention in that arena.

Funnily enough, when I was sold the knife in a brick and mortar shop, it was billed as AEB-L steel. Now that I check here, I see it's listed as Nitro V. Don't know if that's a manufacturer change or if the rep I spoke with was just mistaken. Either way, the biggest gripe I have with this knife is the edge retention, which is by no means bad, but could be a little better. For a home cook, this would knock it out of the park. For a professional, this is a good option.
