This #1200 grit stone is one of our favorites for its durability and sensitivity to pressure. The more you push with this stone the more steel is removed, without removing too much stone. The lighter the pressure the more of a polished edge will develop on your blade. This stone is what we used daily in our San Francisco shop and holds up to over 300 knives a week!
Whetstones for sharpening generally fall within 1000 and 3000 grit. Not considered a daily-use stone if using firm pressure, it can be used more frequently if steady but light pressure is used.
*These Japanese knife sharpening stones need to soak in water for about 3 to 5 minutes before use. To increase the life of your stone don’t soak longer than 12 hours!
