Chicago Tribune - Blade runner: Former chef bringing knife knowledge to town

The Chicago Tribune talks with Town Cutler's Galen Garretson knives, knife making, career moves, and our new location in Chicago's West Loop.

"In September, Galen Garretson, 32, is opening Town Cutler, a specialty knife store in Chicago's West Loop. Born in Carson City, Nev., Garretson moved to San Francisco to attend Le Cordon Bleu College of Culinary Arts. Upon graduation, he worked at several prominent Bay Area restaurants, including Town Hall, Magnolia, Wayfare Tavern and Quince. Opening his flagship store in San Francisco in 2011, Garretson says he chose Chicago for Town Cutler's second location because "it's a great restaurant town; a great food town. We wanted to be somewhere people appreciated the preparation of food."
